    Let it cool, then bag it

    A warm loaf steams, so wait until it is cool to the touch. Cut what you want, put the rest in cut side down, roll the top and clip the strap.

    Out, slice, back in

    Crust with some bite, crumb still soft. Out for breakfast, back in before the coffee is done, standing on the counter like a bread bin that folds away.

  3. 4 to 5
    Sandwich days

    The crumb still slices well for lunches. The crust starts to soften, which is normal for any bread.

  4. 6 to 7
    Toast days

    Toward the end of the week, a slice in the toaster brings the crust right back.

Looking after it

    Tip out the crumbs

    Every few loaves, turn it over the sink and give it a shake.

    Wipe or rinse in cool water

    Wipe the lining with a damp cloth. If it needs more, rinse the bag in cool water with a little mild soap.

    Air dry

    Hang it up or lay it flat, open side up, until it is completely dry. Then it is ready for the next loaf.

    Keep it away from heat

    No hot water, no washing machine, no dishwasher, no dryer. Keep it off the stovetop and out of the oven.

    Re-wax when it looks dry

    When the lining turns pale, rub a bar of beeswax over the inside, warm it with a hair dryer on low until the wax melts in, and let it cool flat.

How long will my bread actually stay fresh?

Up to 7 days. Exactly how long depends on your kitchen and your bread: a crusty sourdough in a cool kitchen goes the distance, a soft loaf on a hot, humid day will not. Toward the end of the week the crust softens, and a slice in the toaster brings it back.

Will my big sourdough fit?

The bag is 13 x 17 inches laid flat. That takes a large sourdough or a Dutch oven loaf, or two smaller loaves side by side, without squashing anything.

Why not just use a plastic or paper bag?

Plastic holds every bit of moisture in, so the crust goes soft and the loaf sweats. Paper lets it all out, so the bread dries and turns hard. Loafnest sits in between: cotton that breathes, with a beeswax-coated lining inside.

How does it close?

Roll the top down two or three times, bring the strap across the roll and clip the buckle. It holds the fold shut and keeps the bag standing neatly on the counter.

How do I clean it?

Wipe the inside with a damp cloth, or rinse the bag in cool water with a little mild soap, then let it air dry. No hot water, no washing machine and no dishwasher, because heat softens the beeswax. The full routine is just above.

Will it stop my bread going moldy?

It is a bread bag, not a preservative. Bread still goes stale in the end, and in a warm, humid kitchen it can still go moldy. If a loaf will not be finished in a few days, slice what is left and freeze it.

Can I keep other things in it?

Anything from the bakery you want to keep from drying out: rolls, bagels, baguettes, croissants. Wipe it out now and then so the crumbs do not build up.
